Even in Roman times, wild boar was considered a very popular dish. In Petronius’ Satyricon there is even a description of a banquet organized by the wealthy Trimalcione, in which a flight of doves hovers from the open belly of a boar. In this era, wild boars, just like pigs, were often raised in the wild in the woods. In the Middle Ages, however, it was one of the favorite animals for hunting and banquets of the nobles.

In the following centuries, wild boars were hunted and brought to extinction in large areas of the Italian peninsula, remaining confined, at the beginning of the twentieth century, in Tuscany, in some areas of the Central Southern Apennines and in Sardinia. In these regions it has become an integral part of local cuisine, also used for delicious second courses in which wild boar meat is enriched with olives or other ingredients.
