With this pâté we can prepare “Crostini Toscani”, also known as “Crostini Neri” (black crostinos).
According to many, their origin even dates back to the age of the ancient Romans. The diners, in the majestic banquets of this period, usually used bread to collect sauces and gravies from large shared plates. This is probably the origin of the black croutons.
In the Middle Ages, the custom of sharing typical of the Roman era was lost, but the habit of accompanying bread with sauces or main course sauces did not disappear, especially in Tuscany.
It was in fact a delicious way used by the poor classes to avoid wasting precious food: the bread of the day before was heated and served with meat-based pâté. Not being wealthy, these people did not have fine cuts of meat available: this is the reason for choosing chicken liver as a base for the pâté.
Over time this dish also spread among the Tuscan nobles, who began to offer crostini to their guests from all the Italian and European courts. The love for this dish spread rapidly and even today the Crostino Nero is one of the most popular dishes in Italy.
