The Sandàra Tomato Sauce is inspired by the recipe of Tuscan tomato sauce. A concentrate of flavor and lightness handed down over the years to our tables.

Curiosities and Anecdotes

The tomato, which arrived in Italy in the sixteenth century, was initially even considered harmful and was used as an ornamental plant. It was only in the 1600s that it was used as a food, especially in the French court. Naples, a Bourbon city at the time, was therefore the first Italian city in which the tomato became a popular food, much loved also because it was cheap and easy to find. In this century and the next it will spread more and more throughout Italy.

Until the early 1800s, however, it was not yet used to season pasta. The first written reference to the tomato sauce used in a pasta dish is found in the 2nd edition of Francesco Leonardi’s Apicio Moderno, dating back to 1807-1808. Here the recipe is indicated as a variant of the “maccaroni alla Napolitana“.

Since then, Tomato Sauce (known in Italy as “Pomarola”) has come a long way, and has quickly become one of the most loved and distinctive recipes of Italy.
